Before Carlos was a coffee farmer he was a soldier.
Carlos and his wife bought a small piece of land in the Inza, region of Cauca, Colombia and had a good first harvest. The good return on his first year of farming allowed him to expand his property and plant a few different varietals to ensure a healthy plant diversity on his farm.

This coffee is of Castillo Variety and was dried without water fermented for 16 hours before being washed 3-4 times and dried on raised beds for 14 days.

Notes: honeycomb, melon, cherry-tomato, tart acidity
