Elkin is a young, pioneering Farmer, from the Huila region of Colombia.  He is extremely involved in his processing methods and is always willing to use technology to help him improve his coffee. He also believes that picking should only be done in the morning as the plants are not stressed, as may be the case in the afternoon or evening from being in the sun all day.

Elkin starts by picking cherries in the morning. During the night and morning hours, the coffee tree does not generate high levels of stress and this results in a higher concentration of sugars in the coffee cherry.

The natural process begins the same day the cherry is picked. Elkin controls the temperature and humidity carefully, ensuring the best results. Cherries are dehydrated and then stacked to obtain a process know was 'desmiele'. This stage takes eight days and the coffee is raked and re-stacked every three hours.
