Percy Pintado only grows the Bourbon varietal on his 5-acre farm. After selective picking, he deplups the coffee on the same day. Then he ferments the coffee for 26 hours before washing and drying. Meaning the freshly depulped coffee sits in a tank without water, fermenting for 26 hours before it is washed, and dried on covered tarps. It is thought that by fermenting the coffee for 26 hours, the mucilage left over from the depulping process can imprint some fruity, more appealing flavors. The drying phase can take anywhere between 20-30 days.

Percy dries the coffee in a covered patio built specifically for drying coffee. The coffee is laid on special tarps, and the roof and sides of the of patio are covered to protect it from rain or strong periods of sunshine. Basically, he controls the temperature in the patio to ensure a consistent drying process. It is techniques like this that make Percy a leader in the coffee growing community of Lima coffee’s.
