Colombia Yellow Pacamara

Grown by producer Luis Anibal Calderon in the Huila region of Colombia, this coffee is a stunning example of varietal and processing methods coming together to produce a wonderful cup of coffee. The Yellow Pacamara is a natural mutation of the Red Pacamara, which was first discovered in Nicaragua. It has thrived in the mountainous region of Huila, Colombia. A floral coffee that packs a big punch! As soon as the ripe cherries were picked off the tree, the lot was then aerobically fermented for 24hrs. Then the whole cherries were placed inside GrainPro bags for 50hrs maintaining a temperature below 72°f and adding CO2.

Finally, the whole cherries were placed on raised beds at a temperature below 77° until ideal moisture content was achieved. This “low and slow” approach helps accentuate the sugars in the cherry, which then imprint themselves onto the bean. It all makes for a juicer cup of coffee. This is high level coffee processing to be sure, and it is becoming increasingly popular in Colombia. In recent years it has helped Colombia separate itself as the leader in naturally processed specialty coffee.

We have been lucky enough to showcase a number of amazing coffees and varietals lately; Sidra, Pink Bourbon, Geisha, Wush Wush, Papayo, and now Yellow Pacamara. We have touched on the importance of varieties in coffee in the past, but just as a refresher, we have seen their importance rise significantly in the last 10 years. Most people are familiar with the different types of wine varieties such as Chardonnay, Pinot Noir, Zinfandel, Merlot and on and on. These same variations are now really being highlighted in coffee, and while some of our single origin offerings are a mix of different varieties, some, like these are not. The most sought after coffees in the world tend to be single-lot varieties.

Luis Anibal specializes in exotic varietals and innovative processing techniques at his farm Villa Betulia in Huila. This is coffee of the highest quality. The mountains of Huila are well known for producing great coffee and this is no exception.
