Papayo, pronounced Pa-Pie-o, is a rare varietal. This offering is from Jairo Arcila’s Santa Monica farm and is just as stunning as the last harvest we shared in 2022. Grown in Colombia’s Huila region, Papayo gets its name from its papaya-shaped cherries, which turn a vibrant orange when ripe. The cup is beautifully complex, bursting with intense flavors.

Carefully fermented and dried to perfection, this single-lot coffee is part of our Grand Cru collection, scoring an impressive 89-90 points. If you’ve loved our Pink Bourbon, Wush Wush, or Maragesha, you won’t want to miss this one!

When we started the company, if you place your order by 10 am, it was roasted that day and shipped to you.  We still adhere to those foundational principles today, and all orders are roasted to order. Anything placed before 8am will roast and ship that day. Anything after 8 am will be roasted and shipped the next day.

We choose beans from farmers and cooperatives who share our commitment to sustainability, quality, and ethical practices. The countries of origin are listed on each of the coffee descriptions.
