Colombia Wush Wush

 

This fantastic lot comes from producer Paola Trujillo, and her farm, Patio Bonito. We first encountered Paola several years ago and are thrilled to have her amazing coffees again. This lot is unique as it is 100% Wush Wush. Discovered in a small Ethiopian village from which it gets its name, Wush Wush is believed to have made its way to Colombia some 25 years ago. The cup profile is very complex with heavy floral and tea-like notes. 


The importance of varieties in coffee has grown significantly in the last ten years. Most people know the different wine varieties, such as Chardonnay, Pinot Noir, Zinfandel, Merlot, and more.  This same trend has taken off in coffee, and while many of our single-origin offerings are a mix of different varieties, some, like this, are not.  The most sought-after coffees in the world tend to be single-lot varieties.  The most famous is Gesha, and now we can add Wush Wush to the mix. Varieties like Gesha, Chilli Bourbon, and Wush Wush have such unique profiles that they are best consumed as is and not blended with other varieties. 


This coffee underwent the “washed process,” where coffee cherries were harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in temperature-controlled conditions until ideal moisture content was achieved. While the washed process yields a very clean and uniform coffee, it still packs a big punch and has notes of blackberries, apple, and lime. When doing our QC process on this, we thought it was naturally processed coffee because it had a delightfully fruit-forward flavor profile.
