Colombia Pink Bourbon from Patio Bonito

We're excited to present another exceptional lot from producer Paola Trujillo and her farm, Patio Bonito. This 100% Pink Bourbon offering marks our second feature from her this fall. We consistently return to the Pink Bourbon varietal for its signature sweetness and floral notes. 

Pink Bourbon has emerged as a standout varietal from Colombia, earning both brand recognition and a loyal following among coffee enthusiasts. Choosing a Pink Bourbon is often synonymous with selecting a quality coffee. When this exceptional varietal meets Paola Trujillo's meticulous care, and attention to detail, the results are truly outstanding. 

In the past, we have talked about the importance of varieties within Arabica coffee comparing it to the different wine varieties, such as Chardonnay, Pinot Noir, Zinfandel, Merlot, etc. Each varietal provides unique tasting notes and traceability. Quality, freshness, and traceability are all elements we strive for when sourcing coffee and this offering ticks every box.      

This coffee underwent the “washed process,” where coffee cherries were harvested following strict ripeness criteria, floated, and hand-sorted to remove defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in temperature-controlled conditions until ideal moisture content was achieved. 

This is another wonderful example of quality and traceability from one of our favorite producers in Colombia!
